For those who love good food in Bangalore, Chef Sanjay Tyagi needs no introduction. The culinary wizard who has served many dignitaries including the late Rajmata of Jaipur, Maharani Gayatri Devi and our dear Prime Minister, Shree Narendra Modi ji has now come up with a brand new food destination in Koramangla, Northwest, Kebab & Curryhouse.

The concept is influenced by the culinary traditions of the North western provinces of undivided India, popularly known as famed Peshawari cuisine. Known for delicate flavours and rustic style of preparation, the meats and vegetables are mildly marinated and cooked in high temperature clay ovens, so they they remain juicy and tender. The minimal use of spices ensures that flavours preserved and dishes are delightfully delicious. The use of ingredients like cream, dry fruits and kesar is quite evident in this cuisine.

Situated on the second floor of bustling Koramangala, It has nice cosy interiors with a modern yet elegant feel. The mesmerising view of grills and tandoor in the kitchen gives this place a rustic charm of dining. The Behari Kebab, which most will mistook for Kebabs from Bihar, were absolute starters delight with minimal of spices, along with the pan-fried minced mutton Chapli Kababs.

The menu at “North West” is an ode to the culinary era of erstwhile Gandhāra Province, curated with utmost love by Chef Tyagi and his amazing team.

The spice in the food is balanced with use of cream, dry fruits and kesar

uses the simplistic style of preparation, where large chunks of meat, seafood and vegetables are marinated sparingly and cooked in the clay tandoor at high temperatures so that they remain tender and succulent. The spices and flavours are judiciously used so as not to overpower the preparations and to be acceptable to every palate. The rusticness of the cuisine and the focus on preserving the flavours and ingredients is another USP of this cuisine.

 

Northwest is an exploratory culinary adventure through what was once the Gandhāra Province.
