Chef Marou’s new Italian menu – Alto Vino,Marriot Whitefield
Alto Vino is one of my best places in Bangalore to enjoy the taste of Italy. Situated at Marriot Whitefield, it is an authentic trattoria-style Italian restaurant.
     Â
Recently, Chef Marou has joined here as their new Italian chef. With 13 years of experience, he is an expert in Italian cuisine.
In 2003 he began his career as a trainee at a restaurant in northern Italy. After having worked as trainee chef & head chef at several restaurants in Italy, he joined Grand Hyatt, Muscat as the Sous Italian Chef in 2011.
       Â
I also came to know through my sources that Chef Marou has finished his Vocational training from ‘Formot’ for restaurant Manager in Italy along with a qualification on Swedish and Scandinavian kitchen from Umea University School of Restaurant and Culinary Art in Sweden.
During my tête-à -tête with the Chef ,I came to know that the “low cooked marinated lamb shank with risotto Milanese and vegetables ” is Chef’s signature creation.
I was invited to be part of the tasting table to unveil the new menu prepared by the Chef. Also present on this occasion was Executive Chef Raheel Ahmad who told me that new dishes has been added along with the existing menu.
The new Italian menu features an array of antipasti, soups and mains along with some great dessert selection. we started with some awesome antipasti selections.
   Â
Bocconcini di Buffalo – Caprese salad with Mozzarella Bocconcini , sweet pesto sauce
Strudeli di Melazane – Strudell of Eggplant Parmigiana , light spicy tomato sauce.
Bruschette Miste – Toasted Focaccia bread, fresh tomato, zucchini and mushrooms.
Fegatini all Sciciiana – Chicken liver, Lemon confit with potato and onion stew
Polipetti alla Mediteranea – Braised octopus , chickpea puree , fresh tomato salad.
The menu also had a very interesting soup by the chef called Zuppa di faro, a vegetarian Italian spelt soup from Tuscany.
The second course or the Secondi , had some interesting dishes to offer too.
Ravioli di Asparagi – asparagus & ricotta ravioli , sage butter roasted pumpkins puree
Risotto al Gorgonzola – Risotto with Gorgonzola cheese and caramelised grapes
Scottata di Branzino – Pan seared sea bass, zucchini salad, shallot compote & terragon sauce
Then we were served much awaited Chef’s signature dish, Stnco D’agnello ,slow cooked marinated lamb shang stew with red wine saffron risotto & winter vegetable.
Finally , we had some awesome Dolci, that had my all time favourite Classic Tiramisu and Gratineted zabaglione & Fresh strawberry, prepared in front of us by the chef himself.
I have always been a big fan of this place. With a perfect blend of ambiance and authentic taste of Italy, Alto Vino has it all for a perfect Italian dinner with your loved ones. Do not forget to meet Chef Marou while you are here. Prior reservation is advised.
